   Rice Pancake

  • 3/4 cup brown rice flour
  • 1/4 cup sweet rice flour
  • 1/4 cup potato starch
  • 2 Tablespoons tapioca starch
  • 2 teaspoons Sage baking powder*
  • 4 Tablespoons Agave' Nectar
  • 1/4 teaspoon cinnamon
  • 2 eggs
  • 1 cup ginger ale**
  1. In a medium bowl combine flours, starches, and baking powder.
  2. In a separate bowl combine ginger ale, eggs, agave', and cinnamon. Blend well.
  3. Add liquid mixture to flour mixture and stir until incorporated.
  4. Cook pancakes as you would normal pancake.

* Sage baking powder is different fromt he regular brands, because it is made without corn.

** When using club soda or ginger ale in pancakes, you may need to add a little more suger to the mix.
