Rice Pancake
- 3/4 cup brown rice flour
- 1/4 cup sweet rice flour
- 1/4 cup potato starch
- 2 Tablespoons tapioca starch
- 2 teaspoons Sage baking powder*
- 4 Tablespoons Agave' Nectar
- 1/4 teaspoon cinnamon
- 2 eggs
- 1 cup ginger ale**
- In a medium bowl combine flours, starches, and baking powder.
- In a separate bowl combine ginger ale, eggs, agave', and cinnamon. Blend well.
- Add liquid mixture to flour mixture and stir until incorporated.
- Cook pancakes as you would normal pancake.
* Sage baking powder is different fromt he regular brands, because it is made without corn.
** When using club soda or ginger ale in pancakes, you may need to add a little more suger to the mix.
